Fun With Food: Pizza Biscuits

Now that school is back in session, I've been trying to think of a variety of lunch ideas to prepare so that lunch doesn't become boring.  Of course I need to make sure the items are filling to get him through the day.  Like every parent, I would also like things that don't take a lot of time to prepare.  And where does every parent looking for ideas go? Pinterest of course! Here is my spin on an idea I saw multiple times, pizza made in a muffin tin.  I decided to try a few different toppings, including items from our balcony garden.

Preheat oven to 350 degrees. Spray the muffin tins with cooking spray to prevent sticking. Start with a can of biscuits, flatten and slightly pull the biscuits to make the circles wider.  Lay them in the muffin cups making sure the dough forms a cup.

Add a tablespoon of pizza sauce to the bottom of each up, then top with cheese.

Add any toppings you would like.  This time I did 3 different pizzas:
              - turkey bacon
              - basil & tomatoes (from our balcony garden)
              - cheese

Bake in the oven for 10 minutes.

Enjoy!

This is one of those recipes that is easy for little helping hands. Perfect for movie or game night!  Once you flatten and pull out the biscuits, simply put all of the topping choices in bowls and they can build their own pizzas.

Rock 'N Read 5K Beneficiary: Little Free Libraries

Still haven't purchased your registration for the Rock 'N Read 5K? Did you know that proceeds benefit the Charlotte Mecklenburg Library Foundation? One of the great community projects that was recently launched by the Library Foundation is the Little Free Library project which was featured in an article in the Charlotte Observer. The Little Free Libraries is a community outreach effort to provide access to books in areas where the population is underserved. LFL's are small containers that house books that are free to the public.  The idea is that people will take books and either put it back when they are finished reading, or will restock the LFL with another book they have previously read. More Little Free Libraries are planned for the Charlotte area, and registrations for the Rock 'N Read 5K will help to continue to fund this great community resource.

Don't forget, we'll be giving away a registration to the Rock 'N Read 5K. Continue reading the Rock 'N Read feature posts to learn about how this event benefits the Charlotte community through the Charlotte Mecklenburg Library Foundation and find out how you could win the registration giveaway.
